This new creation from Holland is unlike any other sheep milk cheese you have ever tasted before. The milk comes from a small farm where the sheep are treated like family. This cheese has been aged for one year, developing a stunning sweet and nutty flavor. Pairs well with a variety of fruit pates, as well as fruity, sweet wines both red and white.
This cheese is naturally smoked with real oakwood chips using a cold smoke technique - no artificial ingredients, flavoring, or processing are used! It's creamy, smooth, mellow and lightly smoky, slices well, and melts beautifully. Ideal for BBQ Parties, melted on steaks or burgers. It's a perfect complement to meats and cold cuts, delicious with mustard.

Soft-Ripened Goat Milk Cheese from Humboldt County California
The Original American Original®. Conceived in a dream (yes, really!) by founder Mary Keehn, this masterpiece paved the way for soft-ripened goat cheese in America. Each handcrafted wheel features a distinctive ribbon of edible vegetable ash. You'll enjoy buttermilk and fresh cream, complemented with floral notes, herbaceous overtones, and a clean citrus finish. As Humboldt Fog matures, the creamline develops and the flavor intensifies.

To optimize the quality of Humboldt Fog, keep cheese cold (32°–40°F) and wrapped in waxed paper. Re-wrapping soft-ripened cheese in wax or parchment paper will allow the cheese to breathe as it continues to ripen. Removing from the refrigerator at least one hour before serving.
Lamb Chopper has a buttery color, smooth texture, and is mild on the palate, but don’t equate “mild” with “lack of complexity” — this is a nutty, subtly sweet cheese that’s semi-firm and meltable, thanks to the higher fat in sheep milk.
Aged three months, Lamb Chopper® is a real crowd pleaser and a favorite with kids — some might even call it the “type O” cheese.
Serve melted with sauteed mushrooms and polenta.
Shave over a melon, mint and prosciutto salad
Beer Pairing: Brown Ale, IPAs, or Porters
Wine Pairings: Sauvignon Blanc, Unoaked Chardonnay or a Vouvray

Aged six months or more, Midnight Moon® is a blushing, ivory-colored goat cheese that’s nutty and brown buttery upfront with a long caramel finish. Similar to a Gouda, as Midnight Moon® ages, protein crystals form and lend a slight crunch to the otherwise dense and smooth cheese. Know someone who (gasp!) doesn’t like goat cheese?
Encourage them to dip their toes back in the water with Midnight Moon®, which has been known to convert even the staunchest of goat cheese critics.
